From The Business Journals"},"content":{"rendered":"<p><img decoding=\"async\" class=\"alignleft size-medium wp-image-15554\" src=\"http:\/\/plantingseedsblog.cdfa.ca.gov\/wordpress\/wp-content\/uploads\/2018\/06\/1280-frozen-veggies-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/plantingseedsblog.cdfa.ca.gov\/wordpress\/wp-content\/uploads\/2018\/06\/1280-frozen-veggies-300x225.jpg 300w, https:\/\/plantingseedsblog.cdfa.ca.gov\/wordpress\/wp-content\/uploads\/2018\/06\/1280-frozen-veggies-768x576.jpg 768w, https:\/\/plantingseedsblog.cdfa.ca.gov\/wordpress\/wp-content\/uploads\/2018\/06\/1280-frozen-veggies-1024x768.jpg 1024w, https:\/\/plantingseedsblog.cdfa.ca.gov\/wordpress\/wp-content\/uploads\/2018\/06\/1280-frozen-veggies.jpg 1200w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/p>\n<p><strong>By Anne Stych<\/strong><\/p>\n<p>If you think frozen vegetables are only good as a makeshift ice pack, think again.<\/p>\n<p>Putting those peas and carrots in your stomach instead of on your swollen knee will give you a nutritional boost almost equal to eating fresh veggies, research finds.<\/p>\n<p>Although 85 percent of people say they know they should eat more vegetables, only one in 10 adults actually meet federal fruit and vegetable intake guidelines, per the\u00a0<a href=\"https:\/\/www.cdc.gov\/media\/releases\/2017\/p1116-fruit-vegetable-consumption.html\" target=\"_blank\" rel=\"noopener\">Centers for Disease Control and Prevention<\/a>.<\/p>\n<p>But new frozen vegetable varieties are making it easier and more fun to up your veggie intake.<\/p>\n<p>Cauliflower as a substitute for potatoes has been the darling of low-carb dieters for years, and a riced version of the vegetable is available in the frozen food section, right next to Green Giant\u2019s veggie tots, made with broccoli, not potatoes.<\/p>\n<p>In January, Green Giant introduced\u00a0<a href=\"https:\/\/www.womansday.com\/food-recipes\/news\/a61038\/green-giant-launches-spiralized-veggies\/\" target=\"_blank\" rel=\"noopener\">frozen spiral veggie noodles<\/a>, a pasta alternative made from zucchini, carrots, butternut squash, and beets, which have just 15 to 50 calories per serving.<\/p>\n<p><a href=\"http:\/\/www.fleischwirtschaft.de\/economy\/news\/RBC-Millennials-take-a-fresh-look-at-frozen-36730\" target=\"_blank\" rel=\"noopener\">Millennials\u00a0<\/a>are increasingly purchasing frozen foods, and fruits and vegetables experienced the most growth in the space in 2017 at 4 percent, and growth in the frozen food sector &#8220;is accelerating as consumers begin to see freezing as a way to preserve food with fewer negatives,&#8221; according to a report from RBC Capital Markets.<\/p>\n<p>Frozen foods, which have a longer shelf life than fresh, help cut back on waste, a potential savings of $1,500 a year, per\u00a0<a href=\"https:\/\/www.npr.org\/sections\/thesalt\/2018\/05\/17\/611693137\/frozen-food-fan-as-sales-rise-studies-show-frozen-produce-is-as-healthy-as-fresh\" target=\"_blank\" rel=\"noopener\">NPR<\/a>.<\/p>\n<p>A\u00a0<a href=\"https:\/\/www.washingtonpost.com\/national\/health-science\/think-frozen-vegetables-are-inferior-think-again\/2018\/06\/01\/4c9c22a8-5454-11e8-9c91-7dab596e8252_story.html?utm_term=.a76bf20d8008\" target=\"_blank\" rel=\"noopener\">study\u00a0<\/a>at the University of California &#8211; Davis tested eight fresh fruits and vegetables for flavor and nutrient content after flash-freezing half and storing the other half according to industry standards.
