Wasting food has been called the \u201cworld\u2019s dumbest environmental problem<\/a>.\u201d Every year, the average family of four in the U.S.\u00a0tosses\u00a0roughly\u00a0$2,000<\/a>\u00a0in food;\u00a030 to 40 percent<\/a>\u00a0of food produced in this country ends up discarded.<\/p>\n

At dinner, our parents urged us to finish everything on our plates. Beyond the moral and economic reasons to do so, it turns out there\u2019s a significant environmental one, too. When food winds up in landfills it produces\u00a0methane<\/a>, a greenhouse gas that is far more potent than the poster child of greenhouse gases, carbon dioxide, which primarily comes from fossil fuel use.<\/p>\n

In fact, if food waste were a country, it would be the\u00a0world’s\u00a0third-largest emitter of greenhouse gases<\/a>, behind China and the United States. Few people realize when they shove some grapes into the bottom drawer of their refrigerator and forget about them, they are contributing to climate change.<\/p>\n

We throw out way too much\u00a0edible food\u00a0<\/strong><\/div>\n<\/div>\n

Throwing out food at home is only part of the problem. As the Natural Resources Defense Council\u00a0noted\u00a0in a report last year, \u201cWe leave entire fields unharvested, reject produce solely for cosmetic reasons, throw out anything past or even close to its \u2018use by\u2019 date, inundate restaurant patrons with massive portions, and let absurd amounts of food rot in the\u00a0back of our fridges<\/a>.\u201d<\/p>\n

A recent\u00a0report\u00a0by the Boston Consulting Group put the dollar figure of wasted food worldwide at\u00a0$1.2 trillion a year<\/a>.<\/p>\n

When we toss food, we\u2019re not just wasting money; we\u2019re also squandering the energy used to grow crops and raise cattle, as well as the energy required to ship, refrigerate and package food.<\/p>\n

It\u2019s time for people, restaurants, supermarkets and farms to consider this cost to the environment when they over-order or carelessly discard edible food. The federal government has recognized the need to address this problem; in 2015 the Department of Agriculture and the Environmental Protection Agency\u00a0set a goal\u00a0of cutting\u00a0food waste in half by 2030<\/a>. It\u2019s doable, and we all have a role to play.<\/p>\n

In May, Agriculture Secretary Sonny Perdue\u00a0hosted a\u00a0food waste roundtable<\/a>\u00a0in Washington.\u00a0\u201cOur nation\u2019s agricultural abundance should be used to nourish those in need, not fill the trash,\u201d Perdue said. \u201cSo many people work on food waste issues in their own spheres, but it\u2019s time to change the culture and adopt a holistic approach to get everyone working together and sharing ideas.\u201d<\/p>\n

Overseas, some\u00a0governments are taking more aggressive actions to stem food waste.\u00a0France, for example,\u00a0bans grocery stores<\/a>\u00a0from tossing edible food. South Korea\u00a0prohibits food waste from landfills<\/a>, and\u00a0requires people to separate food waste from their regular trash.<\/p>\n

While those mandates might prove politically unpalatable in this country,\u00a0some states are taking more modest steps, such as restricting how much food waste can be\u00a0sent to landfills<\/a>, and we should encourage those laudable efforts. But real progress will come when people and businesses step up to solve this problem. And many already are doing so.<\/p>\n

There are smaller steps we can take together<\/strong><\/h3>\n

Food Waste Reduction Alliance \u2014 a collaborative effort of the Grocery Manufacturers Association, the Food Marketing Institute and the National Restaurant Association \u2014 is working to\u00a0standardize\u00a0the confusing panoply of labels that consumers use as cues to determine if food is still\u00a0safe to eat<\/a>.<\/p>\n

There are also organizations like\u00a0Food Cowboy<\/a>,\u00a0Rescuing Leftover Cuisine<\/a>\u00a0and\u00a0Meal Connect<\/a>, which bring technology to food donations \u2014\u00a0allowing farms, grocery stores and restaurants to donate their excess food to food banks. Some supermarket chains are also taking steps to sync unused food to groups feeding the needy. Trader Joe\u2019s has\u00a0Donations Coordinators\u00a0at its stores, who work to bring\u00a0unsold food to nonprofit organizations<\/a>.<\/p>\n

Then there\u2019s \u201cugly food\u201d \u2014\u00a0produce that looks weird or misshapen but is identical in taste and quality to properly proportioned fruits and vegetables. Companies like\u00a0The Misfits\u00a0sell imperfect-looking produce at a discount. As the company says, \u201cCrooked cucumbers, misshapen tomatoes or not-so-red Red Peppers are just as delicious and nutritious as \u2018the other guys\u2019 \u2013 and\u00a0less expensive<\/a>!\u201d<\/p>\n

If we could take these solutions and scale them, the food we\u2019d save could feed millions of hungry people, conserve resources, and make a big dent in one of the biggest sources of climate change.<\/p>\n

It won\u2019t take a rocket scientist to solve this dumb problem. We can do it ourselves.<\/p>\n
